Warmer regions, like South Australian (excluding Adelaide Hills), Hunter Valley, etc are probably the best bets as they would struggle to make a 'modern' style high acid chardonnay. Exceptions apply as always.....

Cork will move given temperature changes, but with screwcap, I'm not convinced that stability of temperature are so critical. High temperatures are a different matter as they increase chemical reactions. Short periods of high-ish temperatures may not be a big issue. But I think it's mostly a matter ...

For a new drinker, top of the range wines like DM could be a waste Imo. Obviously depends on the person who's drinking it. Why not start with a Woodlands cab merlot and see how it goes.....
