Personally I think if you are going to contact a winery about a corked wine you should keep something to send back to verify it or at least as a sign of good faith, preferably the cork and a good chunk of the wine. Mike is coming from the fact that theoretically the colder the temperature a bottle of wine is stored in, the slower it will mature.

Seeing it will be stored for a longgg time, by which Mike assumed to mean ''longer than usual, by all means go colder.Otherwise, 13 degrees''.

Absolutely, John. In some ways, getting a clean bill of health on a couple of thousand dollars worth of wine partially justifies the expense of building and running the cellar! Any particular reason why they chose to open them all Allan?? Your request or low levels or something else?? Along with the other benefits, nice to have a mini Grange vertical tasting too! I am presuming low levels. I didn't ask. All levels were low neck - none were into the shoulder of the bottle....
