C.D different strategic
As we own a boutique winery in Israel, with a lovely and busy C.D, I can say that it is hard to predict who gone a buy and who is coming for a free drop. We had a lot of talks about our policy (what to pour) and we have decided to pour every thing from the all series. We found that people are apprec...

It should be pointed out that the vast majority of enzymes needed for fermentation stop working at such alcohol levels. In the case of Quintarelli, indigenous enzymes that are very resistant do the job... Hi collin Are you sure that enzymes has problem works at very high alcohol level, I think itâ...

Hi again. There are specific chemicals that are aloud to use in winemaking, some of them are critical to the production of great wines such as SO2 or tartaric acid, other are not critical but important to get clear and pleasant wines. Addition of Water is already legal for dissolving and mixing chem...

Re: high alcohol...
Hi Billy B. We all want better wines, that are safe to drink and for a reasonable price to pay. You remind me that a few years ago I been in a wine show overseas. I mate a wine colleague and we had a chat about some wine issue, one subject was very problematic, he said that if I bring him a glass o...

Wine need to be made only from grapes. And a wine should be reflecting the grapes character, not to be change dramatically by chemist (or winemakers). As winemakers we aloud to add some water in to the wine because it is a part of the winemaking process (preparing bentonite….). Not like some o...

Re: High Alcohol?
I found that the too high alcohol is one of the most serious problems of the wine industry. Some wineries are acting to reduce the alcohol levels in them wines, but when you are reducing the alcohol level you are also reducing some other stuff….. One other aspect of the higher level of alcohol...

Re: TCA taint rate any better?
As a winemaker I can say that all the numbers of TCA that mention are making sense. The TCA is between 1% to 15% depends on the quality of the cork, the cork treatments and winemaking process. It is a shame that after years of cellaring the wine – it has TCA problem. But nowadays the TCA prob...

Hi Ratcatcher. We do not have to agree on the scoring system, and some times scores are not reflecting the wine quality. As I know all the wine critics are rating wines with no connection to the price, in most cases there is a direct correlation between the price and the score. As I mention before I...

Giving scores according to the price it is not make sense for me. The wine should get a score only because of its quality, and if a particular wine score 88 and on sell for $9 its maybe better then 89 for $20. Any way even the 100 scale is not consistent, and there are lot of different in the Way it...

I found that some people are too much in decanting the wines. If I compare the same full body red wine that aged for long time in the cellar with decanting and without most of the times I found that the wine after decanting got: • Less body. • Less astringency. • Less acidic. â€...

Its not make sense to create a new name for the Shiraz. It's so hard to create brand name product and it's very easy to destroy that success. Australia is famous for the Shiraz, if people start calling the wine Syrah its will help the French wines….. So be consistent calling the wines Shiraz .

Israeli wines
Hi everybody. There are lot in common between wines made in Israel and the local Australian wines, one thing for sure can't be compare and that the size of the industry Israel is very small. There is an article about some Israeli wines that have tasted in Canada about a week ago. Two of the wines ar...

"The competition makes them do that"
I do not think it is prohibited to indicate the name of the grape variety on the labels, but things had been change and now the customers wants to know the grapes variety and the wineries need to provide it.

Re: SWR - Coffee
I prefer black coffee (Turkish style) it is needed to be strong and biter (no sugar).
I love espresso coffee and again its need to be strong and double.
Coffee is not going in harmony with wine – it's killing the after taste.

Re: What's Wrong With Chardonnay
In my opinion I don’t think that Chardonnay is betteror worse than the other white variety. I think that in some cases the winemakers made the chardonnay look like red wine (more structure, oily, noticeable tannins ….). Some wine lovers don’t like that kind of style, and they bel...

I believe that a battle of wine that has been opened need to be finish. But now we are dealing with the best of the worth, we all believe that a battle that has been opened start to die, what we are dealing now is how to slow that dieing process. And on the other hand we don’t want that the p...

Re: WIne match for Turkish food?
What wines will compliment Turkish fare? Love to break out some great reds but I am not sure they will work. If you mean real Turkish food, not the look alike some times you eat overseas. I suggest you a battle of ruki. You blend the ruki with ice and mineral water. If you can't find good ruki you ...

Re: Wine - The Days After
Hi I try to give you the principle of oxidation - the cooler the wine the more oxidation it will absorbed . So basically it is not recommended to leave an open bottle in the refrig. The vacuum rubber seal is very useful to reduce the amount of oxygen in the bottle. I recommend sealing the battle wi...
