My last look at this wine was 3 years ago as part of a vertical tasting. This was the note from 2020.
Fraser Gallop Estate Parterre Cabernet Sauvignon 2012: Colour tensing towards crimson and garnet. Developed blackcurrant and red fruits alongside pencil shavings. The palate shows savoury oak, firm but integrated tannins, good supporting acid, tomato leaf and intense fruit richness. This has a medium to long finish.
This has matured in the intervening years, and the changes are noticeable. The fruit flavours are still there, but have reduced in intensity, and the wine is only meduim bodied. Oak is in the background apart from some graphite, and tannins are integrated almost completely. What is there is textbook Margaret River cabernet but dialled down a little. Still enjoyable, but not as intense as I hoped for.

Coincidently, I opened one of these over the Easter weekend too. I agree with your note and found I very much enjoyed that it had dialled it back a notch. I have been working my way through a dozen of these for a few years now, and going back a couple of years I wasn't sure I liked where it was at, so I was happier with it this time around
