Spoke to a winemaker friend and he said they are doing everything they can to make sure they have enough for vintage. He also said it's not the only thing that wineries are short of.
I don't want to get political, but we need to restart the manufacturing industry in Australia. China are royally screwing us over at present and not to mention international shipping lines holding everyone over a barrel as well.
Gee I hope 2022 is a better year all around....

This diammonium phosphate stuff...is this mainly used by industrial wineries, or is it used also by the small producers?
This is the first time I've heard of DAP. The wine industry is very good at keeping secret all the additives they put into wines.

For my own part I too have not heard about DAP.
As far as China is concerned it should be noted that it is our own policies via free trade agreements that have favored our manufacturers, for their own profit, to relocate and outsource to China. Consumers have been only too happy to sacrifice local jobs in favour of cheaper prices. The Chinese have been willing to oblige.

Like Bentonite clay, DAP is added as an aid to winemaking, in this case as a nutrient for yeast to conduct a trouble-free ferment without producing off-odours, or even 'sticking' before fermentation is complete. A list of additives/aids for winemaking is readily available - will find out where and get back. Likewise with food manufacturing, there are many aids/additives that might raise eyebrows but readily identified by their number.
Cow's blood, Ferrous Cyanide and Sodium Meta-Bisulfate are some aids that are no longer used!
