Had to try one at a local Michelin starred restaurant.
Purple red with slight bricking. Savoury characters initially to the fore, and it took a couple of hours to open up fully. When opened up, it revealed the cherries and plums, although showing signs of development (somewhat stewed, a local winemaker referred to this today as caramelised). Rich nose and full bodied palate, with the tannins and acid in balance with the developed fruit flavours.
It would be interesting to see this in another 5 years.
