If you mostly store Stelvin and drink within 10 years, and are confident of max 23 degrees, I think all good.

Presuming they are Aussie wines mostly - gutfeel that they are more durable than old world, especially combined with Stelvin.

Tyrrell’s Vat 1 Semillon top for me, followed by Tyrrell’s 4 Acres Shiraz.

I’m amazed at how some of the Burg producers have shot up in price. Used to pick up Bizot at auction a few years ago for cheap, recall the labels looked like they had been printed on a home inkjet printer! Would pass on the Yattarna even with perfect storage.

The St Henri, is dependent on price and storage conditions. If it is just in a garage/cupboard/under the house, pass. If storage appears to have been reasonable and price isn’t too high, worth a try.

This diammonium phosphate stuff...is this mainly used by industrial wineries, or is it used also by the small producers?

This is the first time I've heard of DAP. The wine industry is very good at keeping secret all the additives they put into wines.

Penfolds Bin 28 - had a cheap burnt oak taste to it across the few vintages I've tried. High alcohol bombs like Noon, Wild Duck Creek, etc. Gloopy, soupy and hard work, and so not food-friendly. Barbera - mostly tastes like generic Italian red table wine to me, don't see much point in these for $30+...

Don't understand all the gnashing of teeth here. Just buy them on Langtons when they appear, they're still pretty affordable in the grand scheme of things. Or just go buy some other well-made McLaren Vale shiraz, there's oceans of it out there. It's all just new release hype, don't fall for the FOMO.
