1999 Scarborough blue (export) label Chardonnay

Opened this on Monday night and was confronted by a lovely fruity nose and a clean, crisp finish.
I popped the remainder in the fridge with a vacuum seal and re-visited it last night.
The intensity of the fruit on the nose had somewhat dissipated and the wine seemed to totally change character.
I know we've discussed various measures used for sealing/storing the remainder in a bottle, but I've never seen a wine change overnight like this. I always use the vacuum seals and this is the most ordinary result I've had so far.
All this goes to show (I suppose) is that this wine should be finished in the one sitting. Going on monday nights appraisal it was a wonderful wine and I'm looking forward to the Traditional (yellow) label over the summer.
