Ok, doing this on the run, because I've had to change the question. I just 'googled' todays original question and it gave the answer straight away
What am I? And I want a very specific answer.
Traditionally, I represent the best 2250 litre vat of wine each year
I am no longer produced in my original form – I have had a name change
I am produced from old vines
I am not necessarily produced from the same grape variety each year
New oak has never been used to produce me
I have never been a blend (for AJ)
My earlier releases were usually Cabernet, but I have also been produced from Shiraz
The 85, 82, 81 and 80 of me are reputed to be excellent

My brain discussion:
Come on ladies and gentlemen... a 2250 litre vat!
250 cases of this wine is produced.
I am not sure if it is stainless steel or oak, but I presume oak, but even if it were oak, and even if it new oak, there would not be a great oak presence.
Tyrrells Vat 9 is aged in 2250 litre Vats but there is more than one. Old vines - Hunter, Rutherglen, SA. No longer produced in its original form - maybe it is the Rockford Black... but I think that still goes in the 550 litre oak. Maybe it is a fortified of some sort.
Hmmm... I don't know. Maybe my thoughts might help... probably not.

Adairs on the right track but, the clue says the BEST vat, implies more than one.

I blame my long lunch for me using the phrase "Come on ladies and gentlemen" above. The 2004 Yeringberg Marsanne/Roussanne was lovely... then it was washed down with the Seppelt Fino DP 117, served blind by Attila under the guise that it was a "normal" dry white.

Not St Henri St Henri uses 2000 litre casks and is Shiraz (though in some years a small component of Cabernet is blended in).

The Bethany GR Reserve has chopped and changed between Cab & Shiraz, not sure about quantities, and oak, but it will have to do as a left field guess.
