How long after being opened will a champagne or sparkling still be good to drink? I have often left chardonnay and shiraz for a couple of days after having a glass with either the screw top or a rubber stopper in the bottle and putting them in the fridge and they have still been good and on some occasions they even get better so will fizz last the same or go flat? what would be the best way to reseal the bottle.

Depends on the wine of course, but I'd say two extra days should be OK? Certainly won't be flat on day two from experience, champers doesn't usually last more than two days around here. Not sure about day three, but a good Champagne should handle it. I suppose something like the WineSave product would help prevent oxidisation, if you're so inclined.... sometimes it might get better with a few days of air, but more likely best on day 1.

Don't forget to put a spoon into it! (kidding, it's a myth) Just seal it with a glass/rubber stopper or whatever.

That's the same as our place, with most wine the Mrs has one glass and I drink the rest usually but unfortunately I have to try and cut back a bit.
