1995 Pipers Brook Cuvée Pirie magnum (cork): 12.5% alc. Chardonnay & Pinot Noir, disgorged February 1998. Medium straw/yellow with a surprisingly good mousse and fine but rather flat bead, completely losing its fizz quickly in the hot weather. Still very much alive though with ample, attractive baked bread and yeast characters matched with spicy apple and stonefruits with a touch of mushroom; the palate is light but has good creaminess and acidity, with a crisp finish that is a great match for appetisers & food. Not a bad result considering the magnum began seeping the night before in the fridge, leaving me with low expectations.
