One night in Melbourne

If you only had one night, what is your tip for a great restaurant meal right now in Melbourne?
Requirements are some place innovative with a good wine list, maybe some good VIC producers off the radar. Got to have good Champagne. Preferably in CBD. Please....your top pick only!

If it doesn't have to be CBD then the Town Mouse in Carlton.
If it does have to be CBD, then Ezard.
Personally, I think most of the really innovative cooking in Melbourne, happens outside the CBD. There are a lot of excellent places in the inner 'burbs

If you arrange in advance they will allow BYO ($40 per bottle). Great for an aged bottle from the cellar.

The No 1 or the 8 will get you reasonably close if you get off at Eglin st just before you turns into Lygon, then you'd walk a block across and a block back towards the city. The 96 up Nicholson is probably about the same distance away. It would take me about 5 min to walk, but I do walk pretty fast.

Lots of great places on city fringes at present, not so many in CBD.

One of my favourite finds is O.MY(
http://omyrestaurant.com.au/) out in Beaconsfield. Yes, it's a bit of a trip out there, to sit in a tiny room and enjoy some yummies which may never be repeated (depends on the blend of available ingredients). Haven't had the 8 course, but have tried both the 6 course and the 4 - and they were different every time. Especially like their wine matching - sometimes they offer a choice (one particular fish went particularly well with a local Pinot).
Bit of a trip for some, but worth it.

Just wanted to say thanks for the Town Mouse suggestion.
Had dinner there last night and it was brilliant. Exactly what we were after. All the food was delicious!
We also took the advice to get out of the CBD for food so breaky was at Denis the Menace. Highly recommended.
