I'd suggest maybe a Dom Perignon 2003 for starters, a Cloudy Bay chardy for the white drinkers (maybe a 2008) or a Italian Pinot Grigio, and the red drinkers from China would always appreciate a 2006 Grant Burge Meshach.

I've always found a middle-aged riesling goes well with Spam.
Try a 2007 Helm Classic Dry.
