TN: 1979 Deutz William vs Salon

Both drunk recently while holidaying in idyllic and beautiful Vanuatu ...
<b>1979 Deutz Cuvée William Deutz</b>
Light gold, with vestiges of yellow. Brilliant nose – youthful, toasty, but incredibly creamy and “fluffy†– hints of apples, vanilla, warm baked bread. Still relatively undeveloped considering its 25-year age! Palate is still surprisingly youthful. Lovely integration, harmony and balance. Extraordinary length. Concentrated and full-bodied, reflecting the bouquet. An almost faultless wine. Astonishing 4mm mousse in glass for ten minutes. In the flute, very fine 1mm bubbles. <b>Grand Vin! 19.0 / 20</b>
<b>1979 Salon “S†Blanc de Blancs (Le Mesnil)</b>
Deep golden tinges. Excellent condition. Nose is refined but with a full spectrum. Avalanche of cutting acidity predominates. Palate is clearly a class act – lovely balance. Top length. Some earthy complexity but nonetheless quite subtle with no over-the-top yeastiness or mushrooms. In fact, again, quite youthful. Surprisingly not as dry as I expected with a hint of subtle honey sweetness. Bubbles kept rollicking along for over an hour (relatively large in size compared to the Deutz). Full of life still but fully mature and a notch below great. <b>Excellent 18.5 / 20</b>
