Half the time at Sydney airport they reduce the apllicable tax (WET, GST and duty) considerably (it should be about 2 grand most of the time), the rest of the time I sadly pay the full 49%. Do they ask you for a receipt to confirm the price of the wine ?
I have heard of them googling prices of wine and charging on big prices via the net.

I've been well over the duty free limit at least a dozen times, and have never been asked for receipts. I show them a spreadsheet outlining volumes, price paid and AUD equivalent and that has always been sufficient. That said, I tend to carry most of the receipts just in case.
