East Coast

Go to freycinet, Coombend - both not far from Coles Bay at Bicheno try the Apsley Gorge wines, and Springvale wines just before Swansea.

Stay at Edge of the Bay at Coles Bay - best view of "The Hazards" in the Freycinet Peninsular. Also I think its worth staying at Binnalong Bay which is a beautiful beach at the bottom end of the Bay of Fires region near St Helens.

North

Go along the Tamar river winery route from Launceston and stop off at Strathlyn for lunch and buy and drink Pipers Brook Wines, also worth stopping in at Marions Vineyard and the huge Tamar Ridge wines development near the Tamar bridge. I also like Holm Oak vineyard next to Tamar Ridge. Probably worth popping into Pipers Brook, Bay of Fires? (Hardys), Providence and East Arm on the pipers brook side of the Tamar River. here's a list of all Nthn Tas vineyards

There are a number of nice BB's along the Tamar river that are very picturesque. Launceston has some superb restaurants including Fee and Me - formal but excellent and stillwater - more contemporary with asian influences etc. but I wouldn't stay there - rather visit. great Tasmanian timber design studio near the botantical gardens.

Hope that's useful can give you more details if you wish.
