Yalumba 1991 The Signature Cabernet Shiraz

Good deep red colour. Outstanding aromatics - intense cassis, blackberry, blueberry with some lovely char, and cedar in the background. Vanilla and coconut from the oak well in check. Still amazingly fresh. The palate displays 'more of the same' - excellent 'sweet' concentated berry fruit, subdued oak, good texture, fine acidity, grippy, chalky tannins and a very long dry departure. This wine has prodigious cellaring potential if this bottle is any guide - perhaps another 10-15 years in perfect conditions. Rated Excellent, bordering on Outstanding. Postcript - still drinking beautifully 16 hours after being opened. (Cork in, refridgerated)
