Tahbilk Eric Purbrick Stevens Cabernet Sauvignon 2006

Post by Waiters Friend »

There's a recent posting about this wine, courtesy of Sean and a relatively recent vertical:

2006 Tahbilk Cabernet Sauvignon - Lots of purpley colour and needs a really good decant to get the best out of it. Cedar, mixed spices, musk, mint, sweet blackberry and earth. The fruit is clean tasting suggesting this is still young and unevolved. I like the firm and even slightly astringent tannins that come through on the palate. This is definitely one to keep.

I couldn't wait, although I did decant for 4 hours before service.

Rich blackberry and mulberry nose. It's not especially earthy, but has some spice, cloves, and mint. It's in a really good spot right now - nothing over-developed, but enough happening to give it some interest and complexity. The palate is very satisfying, with the various fruit flavours being offset by reasonable acid, fine but persistent tannins, and a long finish.

It's a complete wine, with nothing out of place, and therefore it's hard to tell whether it will go another 10 years, or whether it's at its peak now. Fortunately, I have one last bottle left, and will give it a go in 2-3 years.

Cheers
Allan
Wine, women and song. Ideally, you can experience all three at once.
