Re: Oak and tannin
Thanks for the info! As for your port barrel, and how much flavour it will impart, it will depend on the age of the barrel and how much port has previously been through it, and whether it has been scraped to expose fresh wood if it has been used before. My port barrel is a new one from seasoned wood...

Oak and tannin
I've just started my new port barrel, and after trying a range of ports, I thought I'd just start with penfolds club because it's nice n smooth. There are some other ports that I've tried that are nice but still have that red winery type harshness and a bit of rough feeling tannins. I don't want to ...

Re: Storing an open red
. I Disagree. Old reds will generally fall apart after 2 hours, let alone the next day. If they're only say 15 years of age, then maybe. Yea, in the question it states that they're new to wines so I was just assuming that they're not drinking a 15 year old vintage every couple of days. When I was n...

Re: Storing an open red
Apparently a wine will experience the effects of oxygenation less quickly if the temperature is lowered.... yea but as a red, it'll usually get better when aired a bit.. idieally if you have a really good old vintage you double decant it back to the bottle about an hour or 2 before drinking, but ev...

Re: Storing an open red
Bradgc, the ethanol is turned into acetic acid by acinetobacter. cheers Carl No Acinetobacter is a bacteria that's found in soil and causes hospital infections and bed sores. Acetobacter probably what you meant, it is one of the many AAB bacteria's that can turn alcohol into vinegar, but it would t...

Re: Storing an open red
Yea you'll find that most reds actually get better on the 2nd or 3rd day of being open. The aeration improves the whine which is why red wine decanters have a very wide flat base to maximise surface area. I've never put my reds in the fridge and they easily last up to a week, and if they seem to be ...

Re: Port barrels.
Ive read both of those threads already, im thinking that i'll use penfolds club or mcwilliams hanwood tawny. Also i'll taste fino sherry to see if its any good to add it as ive seen it suggested a few times.
Does anyone know if there are any conditions which would make the port off or stale?

Seasoning a new port barrel
I've ordered a new port barrel made in mexico, these barrels are made for tequila and whiskey. They are american oak and the inside is "medium charred". I hear that new barrels need to be seasoned so im just wondering how i do this? Its only a 2L barrel so i hear that they can get really o...
