Bit late, but I opened a Conterno Fantino Sori Ginestra 2010 last month, decanted for an hour or so, that's all it needed. Perfect from the first glass to the last.

There are plenty of Asian and Pizza/pasta restaurants who have no problem with byo. Happy to give them my cash.
