Capel Vale Margaret River Chardonnay 2007: Made in a more fatter and heavier butterscotch style and also has been given a good dollop of oak. Sometimes I really do like that style. Very good. The reason for the change over to screwcaps was due to the discovery that wine develops anaerobically (without air) and therefore the theory of the cork allowing air into the wine was defunct. I can't speak for other wineries, but this particular wine is under the cellar exclusive range (only sold to Capel Vale members or via cellar door) and thus we play around more with the winemaking techniques. We used a wild yeast to ferment and the winemaker really pushed for a burgundian style. Not something that we would produce for the mainstream, but interesting to play around with in the cellar exclusive range.

The Tempranillo was a star in the restaurant, in particular with any lamb dishes.
Unfortunately we don't have any left, but you should try the Petit Verdot. Chewy tannins with a plum and violet character.
