Temp,
I understand that because the wines are fortifieds and stored in inert plastic containers, there are no huge dramas in just hanging on to the excess until you need it. This is the advice I was given after posing the same question. I got some gear from liebich too.

Hi AusTempest, As luck would have it I have just completed this very task over the weekend. As luck (or otherwise) would have it, mine are in a Canberra passive cellar too. So at the next appropriate fine drinking opportunity I might pop the cork on one of them and keep my fingers crossed that the cork lottery is kind to me. Thanks again.
