Ascorbic acid is a powerfull antioxidant and is often added to white wines from warmer regions when the fruit is lacking natural acidity. Sulphur dioxide, as well as being a prservative, acts as an antioxident and is almost always in white wines to some degree, especially those fermented or aged in ...

I was a bit underwhelmed by this wine. Ginger had tasted it months earlier from the barrel and raved so highly that I guess I expected more. Had an '03 Wild Bunch last night and thought it was probably a better wine from a technical standpoint that the '02, but it had lost a bit of magic.

Lots of Canadian craft brewery beers at the Great Canadian Beer Festival. Very high standard. Wines have been a little disappointing as I'm a bit of a closet red bigot and Vancouver Island just doesn't get warm enough for long enough in the summer. Better luck next week in the Okanagan. As an aside,...

I have a theory that Australian red wines are called for being sweet when in reality, they're just clean. Nothing like bret/TCA/VA to kill what little ripe fruit character that may have been there. When it comes to food and drink in general, I was always of the impression that Americans had a genera...

1996 Penley Estate Hyland Shiraz (CD museum release)

I was very impressed with the current Penley wines we tasted at the cellar door last week and so the museum release seemed like a decent punt. Three waiters spent ten minutes fiddling and tasting which had me thinking that it was either going to be really good or that one of them had dropped a conta...
