I don’t think we settled on a theme, but I have promised the 2005 Clos des Papes Châteauneuf-du-Pape) and the 1954 Hardy’s Show Reserve Port Bin No.M177.

See that TWE plan to direct fruit back to Seppelts and Wynns to off set the China losses...and supposedly to improve the quality of these wines, that have had fruit 'stolen' from them for years Perhaps they can let Sue Hodder and Allan Jenkins have a run at the Pennies vineyards in Coonawarra :wink...

Mine are all at National Storage Bowen Hills. It's a pretty big cellar and there are a number of large wine units available last time I was there 2 weeks ago. 24 hr access etc.

Kohen, I'd do a double decant 24 hours before service to get any sediment off. Put the cap/cork back in/on and they will show well. You could even go 48 hours with most of those particularly the Wendouree.
A variation on the slow ox method. I call it the 'fast slow ox'.

Just checked out the menu at 85 Miskin and it’s all new with a few old favourites like the beef cheeks (Mr Tickle).
On the wine front I have an 08 Bordeaux and a Sangiovese that need to be opened. Unfortunately my German Rizzer are a little young :(
