Some airflow is good to reduce stagnation on prevent mold buildup. I have an exhaust fan run on for 5 minutes a day at the coolest time of the day for this.

I'l answer your question with another question. When you cellar is at 20degC initially, how do you propose to remove the heat?

If you live in Australia, then I doubt you will have an ambient air temperature to support even a 16degC fan control. Basically if you set your fan to come on at 14degC, it will hardly come on, especially when you really need to cool down the cellar, in summer.

Opened a 2002 Pet. Hanlin Hill Riesling last night and it was fantastic. Yes, the 2002 is one great wine. Would you please tell me if your bottle was under cork or screwcap? Thanks, Adair This particular one was screwcap, but I've had the same out of my cellar in cork, with no noticeable difference.

DV, the cellar is finished, but certainly not full.

There are a few thing's I'd like to do, like I'd love metal mesh racking throughout with some bin storage. Right now I use six 120 bottle bordex racks.

I'll take some snaps of it.

Well I have an underground cellar in Perth. When passive it was 16-24degC/60-70%RH through a year Now its 16-18degC/70-90%RH through a year. The very well insulated underground cellar means the duty on the A/C is very low, and even on hot days, the compressor runs for maybe 5 min per half hour.

Purchased from cellar door on release, and stored in my cellar since.

Closure was screwcap and decanted.

Delight to open, and drinking superbly now too. Could stretch another few years but I loved it at this age.

Lee, yes these fluctuations are due to the compressor turning on and off. When I had a wine fridge I observed the same thing with a data logger like yours. I even see it in my below ground cellar when the aircon comes on now as well. http://img243.imageshack.us/img243/2439/cellarse8.png [/img]

plummy what dimensions is your cellar? where is the head unit located, what type of insulation/door etc. are you using? Where are you measuring the temperature, and how? Have you measured humidity?

My A/C is starting to be used less now that the cooler months are coming, which is great.
